The Story of Zeno’s on the Square

In the spring of 2017, while traveling through her native Italy, Monica Russo—co-owner of Zeno’s on the Square, with Mike Waltrip—discovered something extraordinary. She met Chef “Max” Zubboli and was immediately captivated by both his culinary artistry and his passion for authentic Italian cuisine.

Chef Max’s impressive career began at a prestigious culinary school in Pisa, followed by years of training under renowned Italian chefs in the Versilia region, nestled along the Tyrrhenian coast north of Tuscany. His expertise extended beyond the kitchen—he was instrumental in launching innovative restaurant concepts, mastering both back-of-house operations and front-of-house hospitality. With his hands-on experience, classical training, and enthusiasm for new ventures, he was the perfect choice to help Monica and her younger brother Zeno (the restaurant’s namesake and manager) bring their vision to life.

A year before Zeno’s on the Square was set to open, Monica invited Max to Texas, allowing him to explore the Lone Star State as a tourist. A defining moment of his journey was attending the 2017 National Cutting Horse Association Futurity in Fort Worth—an experience that left him enthralled. From that moment, Texas felt like home, and Zeno’s on the Square had found its Executive Chef.

With the concept finalized and a talented team assembled, Zeno’s on the Square opened its doors in June 2018. The restaurant is dedicated to serving fresh, homemade, and authentic Northern Italian cuisine, complemented by a full bar and an expertly curated selection of fine Italian wines.

Max’s wife, Antonella—whom he met in culinary school and who is an exceptional chef in her own right—plays a key role in the kitchen, working alongside Monica to craft fresh homemade pasta and exquisite, made-from-scratch desserts.

Together, this passionate team brings a true taste of Italy to the heart of Texas, offering guests an unforgettable dining experience steeped in tradition, artistry, and genuine hospitality.
